Pasta Primavera
1 lbs. of pasta, cooked to package directions.
1 red pepper, chopped
1 head of broccoli, chopped to florets
1 zucchini, chopped
1 vidalia onion, chopped
Olive oil, salt, pepper and crushed red pepper flakes.
Parmesan or Romano Cheese
1) Cook pasta according to package directions. Toss with olive oil and set aside.
2) Arrange cut vegetables on a cookie sheet, coat with olive oil (about 2-3 Tbsp.) and season with salt and pepper. Bake in a 400 degree oven for approx. 20 minutes.
3) Remove garlic and chop fine
4) Toss vegetables with pasta and season to taste.
Serve with Parmesan or Romano Cheese

I love grilled veggies - I might have to try it with grilled veggies while I can still grill!
